Courgette Curls with Salmon

The courgette curls are one of the most popular appetizers in French Cuisine, and they offer great taste from the mix of courgette and salmon.
Ingredients (4 servings)
3 1/2 ounces cream cheese
3 1/2 ounces cottage cheese
½ lemon, juiced & zested
2 medium courgettes
2 ounces smoked salmon
1 teaspoon fresh chives, 2 inch lengths
Preparation
Mix the cottage cheese, cream cheese, and lemon juice and zest in a bowl until combined. Season with salt and black pepper. Using a peeler to cut the courgette into ribbons. Pat them down with a paper towel to absorb excess water. Now curl each piece of courgette into a circle, secure with a toothpick, and set it on a serving platter. Repeat the same with the remaining courgette. Spoon the cheese and cream mixture into each courgette circle. Garnish with chives and smoked salmon.
