A frisée salad is a right fit to serve with all your French entrees. Here the bacon and eggs are mixed with veggies and a mustard dressing for a wholesome flavor.
Ingredients (4 servings)
4 cups torn frisée, washed and dried
2 tablespoons olive oil
4 eggs
½ pound bacon, crispy and crumbled
1 shallot, chopped
4 tablespoons sherry vinegar
1 tablespoon Dijon mustard
Salt, to taste
Black pepper, to taste
Preparation
Sauté the onion, bacon, greens, vinegar and Dijon mustard in a skillet for 2 minutes then transfer to a salad bowl. Fill a suitable cooking pan with water and add a pinch of salt. Let the water boil and then make a whirlpool with a spoon. Add one egg into the water and cook for 5 minutes. Transfer the poached egg on top of the salad and repeat the same with the remaining eggs. Drizzle salt and black pepper on top. Serve.
