Salade Landaise is a lettuce, bread, and duck dish, which has a refreshing taste due to the use of mint in it. It’s great to serve with skewers and soups.
Ingredients (4 servings)
2 1/2 ounces smoked duck breast, sliced
3 1/2 ounces crustless white bread, cubed
2 ounces walnuts
5 ounces lettuce, leaves separated
8 cherry tomatoes, halved
For the dressing
1 shallot, finely diced
1 teaspoon Dijon mustard
3 teaspoons sherry
1 teaspoon honey
5 tablespoons olive oil
1 tablespoon chives, chopped
Preparation
Place the duck breast in a greased baking sheet and bake for almost 20 minutes until crispy and golden brown. Shred the duck meat and transfer to a salad bowl. Toss in white bread, walnuts, lettuce, and cherry tomatoes. Mix the shallot, Dijon mustard, sherry, honey, olive oil, and chives in a small bowl. Pour the dressing into the salad bowl. Mix well and serve.
