Niçoise Salad

The Niçoise is a potato and egg-based salad which has a unique taste due to the use of niçoise olives. Its leafy green content makes it fiber-rich.
Ingredients (4 servings)
1-pound red-skinned potatoes, sliced, boiled
2 tablespoons dry white wine
10 ounces haricots verts, trimmed and boiled
4 large eggs, boiled, peeled, and quartered
1/4 cup white wine vinegar
1/2 shallot, minced
2 tablespoons Dijon mustard
1 tablespoon fresh thyme, chopped
3/4 cup olive oil
8 cherry tomatoes, halved or quartered
1 head Boston lettuce, leaves separated
6 radishes, trimmed and quartered
2 (5 1/2-ounce) cans tuna packed in olive oil, drained
1/2 cup niçoise olives
Freshly ground pepper, to taste
Salt, to taste
Preparation
Add all the niçoise salad ingredients to a salad bowl and mix well. Serve.
