The French potato soup is a delight to serve during winters. It’s acclaimed for its healing effects and offers a very energizing combination of ingredients.
Ingredients (8 servings)
1-pound Yukon potatoes, peeled and cubed
1 ½ cups carrots, peeled and cubed
2 tablespoons butter
3 cups leeks, diced
2 teaspoons coarse salt
1 1/2 teaspoons ground black pepper
8 cups vegetable stock
6 tablespoons whipping cream
2 tablespoons minced fresh chives
Preparation
In a large saucepot, melt and heat the butter over medium heat. Stir in leeks, potatoes, and carrots and season with the salt and black pepper, to taste. Sauté for about 5 minutes until very fragrant, and then add the stock.
After the first boil, simmer for about 45 minutes until the vegetables are tender. Use a handheld blender, puree the cooked soup until it’s smooth. Season with additional salt and black pepper. Remove the soup from the heat. Stir in the cream. Lastly, ladle into bowls and garnish with chives.
