Chicken Consommé

You don’t know until you try it! That’s what people told me about Chicken consommé, and it indeed tasted more unique and flavorsome than other soups I’ve sampled.
Ingredients (6 servings)
1 cooked chicken carcass
1 medium onion, halved
1 large carrot, chopped
1 celery stalk, chopped
1 garlic clove
1 small handful fresh tarragon
1 handful flat-leaf parsley
1 bay leaf
3 large egg whites
3 drops Kitchen Bouquet
Salt and black pepper, to taste
Preparation
In a large stock, add the onion, the carcass, carrot, garlic, celery, tarragon, parsley, and bay leaf. Pour in enough of the cold water to cover the ingredients and bring to a boil. And cook the stock for about 2 hours, and then strain the liquid. Stir in egg whites’ butter, cook the liquid to a boil, and then simmer for 15 minutes. Layer a sieve with a clean muslin. Gently ladle the soup into the sieve. Return the soup to a pot and heat it for 10 minutes. Serve warm.
