Chickpea Ratatouille Haloumi Bake

The classic French ratatouille halloumi bake is here to complete your French menu. This meal can be served on all special occasions and festive celebrations.
Ingredients (6 servings)
2 tablespoon olive oil
1 red onion, halved, cut into thin wedges
1 eggplant, cut into ¾ inch pieces
2 zucchinis, chopped
1 large red capsicum, chopped
2 ounces red wine and garlic tomato pasta sauce
2 ounces can chickpeas, rinsed, drained
2 x 2/3-ounce pkts chili or plain halloumi, sliced
1/2-ounce cherry truss tomatoes stem cut into bunches
Fresh continental parsley leaves, to serve
Preparation
At 428 degrees F, preheat your oven. Preheat the oil in a deep ovenproof skillet over medium-high heat. Add onion and eggplant. Sauté for 5 minutes until the eggplant softens. Add the zucchini and capsicum. Sauté for 3 minutes. Add the pasta sauce, chickpeas, and 1⁄4 cup water. Bring to the boil. Take it off the heat. Layer the halloumi slices over vegetable mixture. Arrange tomato on top. Season with Added black pepper. Bake for 15 minutes until heated through. Turn the oven to the grill setting. Grill for 2 minutes until the halloumi is golden. Sprinkle with the parsley leaves to serve.
