French Onion Chicken

Ingredients (4 servings)
1 tablespoon olive oil
4 chicken breast fillets
1 1/2-ounces butter
2 large brown onions, sliced
1 tablespoon fresh thyme leaves
1 1/2 tablespoons corn flour
1 1/2 cups beef stock
2 teaspoons Worcestershire sauce
4 ounces gruyere cheese, grated
2 tablespoons parsley leaves, chopped
Steamed green beans, to serve
Crusty bread, to serve
Preparation
Heat the oil in a suitable ovenproof skillet over medium-high heat. Add the chicken. Cook, for 5 minutes per side until the chicken is soft. Transfer to a suitable plate. Melt and heat the butter in the same pan over medium-high heat. Add the onion and thyme. Sauté for 12 minutes until golden and caramelized. Mix the corn flour with 1⁄4 cup stock in a small bowl until smooth. Add remaining stock and Worcestershire sauce to the pan. Simmer, uncovered, for 2 minutes. Add the corn flour mixture to a pan. Season with pepper. Sauté for 2 minutes until sauce thickens. Preheat grill. Add the chicken to a pan. Cook for 2 minutes per side until heated through. Top the chicken with cheese. Grill for about 5 minutes until the cheese is melted. Sprinkle with parsley. Serve with beans and bread.
