Rutabaga, Potato, and Bacon Gratin

It's about time to try some classic potato bacon gratin on the menu and make it more diverse and flavorsome. Serve warm with your favorite cheese on top.
Ingredients (4 servings)
4 bacon rashers, chopped
1 large rutabaga, peeled and sliced
4 large potatoes, sliced
1 brown onion, sliced
1 garlic clove, sliced
6 thyme sprigs
2 teaspoons rosemary, chopped
1 ½ cups thickened cream
1/2 cup chicken stock
1/2 cup cheddar cheese, grated
Thyme sprigs, extra, to serve
Preparation
At 320 degrees F, preheat your oven. Grease an ovenproof dish. Cook and sauté the bacon in a medium skillet over medium heat for 5 minutes until golden. Layer the potato, rutabaga, onion, thyme, garlic, rosemary, and bacon in the prepared dish. Mix the cream with the stock in a small bowl. Pour evenly over the potato layer. Bake for 1 hour until the potato and the rutabaga are soft, and the gratin is golden. Drizzle cheddar on top and bake for 15 minutes until golden. Slice and serve.
