Beef Brisket Bourguignon

Ingredients (6 servings)
2 tablespoons olive oil
3 pounds beef brisket
12 eschalots, peeled
7 ounces streaky bacon, halved, chopped
3 garlic cloves, crushed
6 sprigs fresh thyme
1 dried bay leaf
1 cup red wine
1/2 cup beef stock
1 tablespoon tomato paste
2 carrots, sliced
7 ounces Swiss brown mushrooms, halved
7 ounces button mushrooms
10 ½ ounces green beans, steamed
Mashed potato, to serve
Preparation
Heat half of the oil in a slow cooker bowl over medium-high heat. Sear the beef for 5 minutes per side until brown. Transfer it to a plate. Reduce the bowl’s heat to medium. Add the remaining oil, eschalot, and bacon. Sauté for 5 minutes until the eschalot softens. Stir in the garlic and thyme. Cook for 1 minute. Transfer the bowl to a slow cooker.
Add the bay leaf, brisket, wine, stock, tomato paste, carrots, and mushrooms. Cover and continue cooking for 6 hours on low heat until the beef is tender. Remove and discard the bay leaf. Using 2 forks, shred the meat coarsely. Season with salt and black pepper. Serve with green beans and mashed potatoes.
