Ingredients (8 servings)
2 teaspoons olive oil
3 pounds of chicken pieces
12 shallots, peeled
7 ounces button mushrooms
4 bacon rashers, chopped
2 garlic cloves, crushed
2 tablespoons plain flour
1 1/2 cups dry red wine
1 cup chicken stock
6 thyme sprigs
2 dried bay leaves
Cream Mash
4 large potatoes, peeled, chopped
2 tablespoons butter
1/2 cup sour cream
1/4 cup milk
Preparation
At 320 degrees F, preheat your oven. Pour the oil into a suitable large skillet over high heat. Stir in chicken and sauté for almost 5 minutes until golden. Transfer to a roasting pan. Add the shallots to the skillet and sauté for 5 minutes until lightly golden. Add to the chicken. Add the mushrooms and bacon to the skillet. Sauté for 5 minutes approximately. Stir in garlic and sauté for 1 minute. Add the flour and stir for 1 min until well combined. Pour in wine and stock, then bring it to a simmer. Pour over the chicken mixture. Add the thyme and bay leaves. Roast, basting the chicken occasionally, for 2 hours until the chicken almost falls off the bone and the sauce thickens.
