These French Ratatouille are a must-have for every fancy dinner, and with the help of this recipe, you can cook them in no time.
Ingredients (4 servings)
3 tablespoons olive oil
1 eggplant, diced
1 large onion, chopped
1 tablespoon tomato puree
4 tomatoes
1 yellow capsicum, diced
1 red capsicum, diced
1/2 tablespoon fresh thyme, chopped
2 garlic cloves, minced
2 tablespoons fresh basil leaves
Bread, toasted, to serve
Preparation
Carve a small cross at the base of each of the 4 tomatoes and place them in a bowl filled with hot boiling water for 20 seconds. Peel the tomatoes and discard their skins. Pour the oil into a suitable skillet over medium heat and add the eggplant. Sauté for 5-6 minutes. Transfer to a suitable plate and keep them aside. Sauté the onion in the same pan for 3 minutes, then add the capsicum and cook for another 5 minutes. Return the sautéed eggplant to the pan and stir in the tomato puree. Add the tomatoes, thyme, and garlic. Reduce the cooking heat to low, cover, and cook for 15 minutes, with occasional stirring. Stir in the basil. Serve warm either on toast or with roast meat or fish.
