Louise's Two-Potato Gratin

The refreshing two potato gratin always tastes great when you bake them all together with Parmesan and brown onion.
Ingredients (6 servings)
1 tablespoon olive oil
1 brown onion, chopped
1 garlic clove, chopped
1 1/2 cups milk
2/3 cup chicken stock
3 sprigs fresh lemon thyme
32 ounces Carisma potatoes, unpeeled, sliced
23 ounces sweet potato, peeled and sliced
2/3 cup finely grated parmesan
Fresh thyme sprigs, to serve
Preparation
Pour oil into a skillet over medium-low heat. Sauté the onion and garlic for 4-5 minutes until the soft and golden. Stir in milk, stock, and thyme. Let the mixture heat over a low. Season with black pepper and set it aside. At 320 degrees F, preheat your oven. Grease a suitable ovenproof baking dish with cooking oil. Spread half of the potato and sweet potato slices in a layer in the prepared dish. Sprinkle half of the Parmesan on top. Ladle half the warm milk mixture on top. Add another layer of the remaining potato and sweet potato to the remaining milk mixture on top. Garnish with the remaining parmesan. Set aside for 5 minutes to soak. Cover this dish with foil. Bake for about 50 minutes. Increase the oven to 375 degrees F. Uncover the dish and bake for another 20-25 minutes until golden and crunchy. Garnish with thyme.
