Are you in a mood to have turnip and kale on the menu? Well, you can bake a gratin with them at home using this quick recipe.
Ingredients (6 servings)
1 1/3 cups thickened cream
1/2 cup milk
2 garlic cloves, crushed
17 ½ ounces washed potatoes, peeled, sliced
25 ounces turnips, peeled, sliced
1 tablespoon thyme leaves
1 cup (3 1/2 ounces) cheddar, grated
2 teaspoons olive oil
3 bacon rashers, rind removed, chopped
3 kale stems, trimmed, chopped
Finely grated lemon rind, to serve
Spinach and red beetroot leaves, to serve
Preparation
At 392 degrees F, preheat your oven. Grease a 6-cup baking dish. Add cream, milk, and garlic to a large saucepan over medium heat. Bring it to a simmer. Add the potato and turnip and cook, covered, for 8 minutes until almost tender. Stir in the thyme. Transfer to the prepared baking dish. Sprinkle with cheddar. Bake for 25 minutes until liquid reduces, and the top is golden. During this time, pour oil into a large skillet over medium-high heat. Add the bacon. Sauté for 5 minutes until crispy. Add the kale. Sauté for 3 minutes until bright green. Top the gratin with the kale mixture and lemon rind. Serve with salad leaves.
