Ingredients (6 servings)
2 3/4 cups thickened cream
3/4 cup full-cream milk
1 1/2 tablespoons fresh thyme leaves
2 cloves garlic, chopped
3 1/4 pounds brushed potatoes, peeled, sliced
9 ounces vintage cheddar cheese, grated
Preparation
At 350 degrees F, preheat your oven. In a medium bowl, whisk the cream, milk, thyme, salt, black pepper, and garlic. Spread 1/4 of the potatoes over the baking dish, overlapping the slices in a single layer. Sprinkle salt and black pepper on top. Add 1/4 of the cream mixture and then sprinkle with 1/4 of the cheese. Repeat to get four layers. Bake for about 1 hour, until the cream mixture bubbles and then serve.
