Zucchini Cheddar Quiche

Zucchini cheddar quiche is always a delight on a menu. Now you can make it easily at home by using the following, simple ingredients.
Ingredients (6 servings)
1/2 cup cheddar, grated
6 ounces unsalted butter, diced
1/3 cup diced water
7 ounces bacon rashers, chopped
1 large shallot, sliced
1 teaspoon fresh thyme, chopped
2 medium zucchinis
6 large eggs
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup full cream milk
1 3/4 cups plain flour
Preparation
For the pastry, at 375 degrees F, preheat your oven. Blend flour, butter, and salt in a blender. Transfer the prepared dough to a working surface and spread it into a disc. Wrap it in a plastic wrap and refrigerate for 1 hour. Spread the pastry dough into a round quiche dish. Cover it with a parchment sheet, add weights and bake for 20 minutes until golden. Remove its weights and parchment paper and continue baking for 10 minutes, until golden. Transfer the dish to a rack and let it cool completely. Dial down the oven’s temperature to 350 degrees F.
Set a medium, heavy-based skillet over medium-high heat. Sauté the bacon for about 5 minutes, until crispy. Transfer the bacon to a small bowl using a slotted spoon. Add thyme and shallot to the pan and cook for 1 minute, until soft. Cut the zucchini into thin slices with a peeler. In a large mixing bowl, whisk the sour cream, eggs, milk, salt, and black pepper. Add bacon, shallot mixture, and cheese and add the mixture to pastry. Roll up each strip of zucchini and place them in the filling. Bake this quiche for 40 minutes, until the filling is just set. Remove the baked quiche from the oven and let it cool for 20 minutes. Cut into wedges and serve warm.
