1 2/3 ounces champagne ham
3 1/2 ounces tasty cheddar, sliced
1/4 cup plain flour
2 eggs, beaten
1 1/2 cups panko breadcrumbs
2 tablespoons olive oil
2/3-ounce butter
10 ounces tomatoes

Preparation
Pound each piece of chicken to flatten. Divide ham and cheddar among half the pieces. Top with remaining chicken and sandwich together. Dust with flour and shake off excess. Dip in egg then breadcrumbs to coat. Chill on a tray for 15 minutes. At 392 degrees F, preheat your oven. Layer a baking sheet with parchment paper. Add and heat oil and butter to a large skillet over medium heat. Cook the chicken for 3 minutes each side until golden. Transfer to prepared tray. Add tomatoes to the tray. Bake for 5 minutes until the chicken is cooked through and tomatoes just softened. Wilt the spinach in a skillet over high heat for 1-2 minutes. Divide the chicken, spinach, and tomatoes among plates, and sprinkle with additional black pepper. Serve with mashed potatoes.
