Sweet Corn and Zucchini Ratatouille

Ingredients (8 servings)
3 tablespoons olive oil
2 small red onions, diced
4 garlic cloves, chopped
2 red capsicum, diced
2 green capsicum, diced
6 zucchinis, diced
3 cups of kernels
1/2 cup parsley, chopped
4 tablespoons fresh thyme, chopped
1/2 cup basil leaves, chopped
4 tablespoons fresh lemon juice
Preparation
Pour the oil into a large saucepot over medium-high heat. Add the onions and sauté for about 4 minutes until softened. Add the garlic and sauté for almost 30 seconds. Add the red and green capsicum and sauté for about 4 minutes until softened. Add the corn and zucchini, then sauté for about 5 minutes until crisp-tender. Stir in the parsley, thyme, basil leaves, and lemon juice. Season with salt and black pepper. Serve.
