Tomato and Zucchini Clafoutis

This clafoutis is a flavorsome mix of tomato with zucchini, which is cooked and served with a number of cheeses on top, especially cheddar.
Ingredients (6 servings)
9 ounces cherry tomatoes
2 zucchinis, sliced diagonally
2 garlic cloves, chopped
2 teaspoons fresh rosemary, chopped
3 teaspoons olive oil
6 eggs, mixed
1 1/2 cups milk
1/2 cup plain flour
1 1/3 cups cheddar, grated
Mixed salad leaves, to serve
Preparation
Preheat grill on high. Grease four 1 1/2 cup ovenproof ramekins. Place the tomatoes, zucchini, garlic, and rosemary on a baking sheet and drizzle with oil. Toss to combine. Cook under the oven grill for about 10 minutes until golden. Divide the tomato mixture among the prepared ramekins. During this time, mix the egg, milk, and flour in a jug. Stir in the cheddar. At 392 degrees F, preheat your oven. Divide the egg mixture among the ramekins. Bake for 15 minutes until set. Serve with mixed salad leaves.
