Ingredients (4 servings)
4 chicken breast fillets, boneless
2 teaspoons olive oil
1 garlic clove, sliced
1/4 cup dry white wine
17 1/2 ounces seedless grapes
1/2 cup chicken stock
8 sprigs fresh thyme
1/4 cup thickened cream
Crusty bread, to serve

Preparation
Pour the oil into a suitable skillet over medium heat. Sear the chicken for 3 minutes each side until just golden. Transfer to a suitable plate. Cook garlic in the pan for 30 seconds. Add chicken and wine to the pan. Cook for 1 minute until reduced. Add the grapes, stock, and thyme. Simmer it for about 10 minutes until chicken is cooked through. Transfer the grapes and cooked chicken and to a plate. Pour the cream into the wine mixture. Reduce its heat to low and simmer for 2 minutes until the mixture thickens. Divide the chicken into the serving plates. Serve with sauce, grapes, and bread.
