Goat's Cheese and Spring Onion Galette

When you can’t think of anything to serve in the lunch, then this cheese and onion galette will help you big time.
Ingredients (4 servings)
1 1/2 cups plain flour
4 ounces unsalted butter, chopped
1 tablespoon olive oil
1 pinch of salt
2 bunches spring onions, sliced
11 1/2-ounces soft goat's cheese
1/2 cup (3 1/2 ounces) ricotta
3/4 cup mozzarella, grated
1/4 cup creme fraiche
1/4 cup grated Parmesan
Preparation
Add the butter, flour, and salt to a food processor and blend until the mixture is coarse. Add 1/4 cup diced water, processing until it makes a smooth ball. Wrap the dough with plastic wrap then refrigerate for 30 minutes. On a well-floured surface, spread the dough into a 14 inch circle, trimming the edges. Layer a baking sheet with parchment paper. Place the pastry on the tray and refrigerate for 30 minutes.
During this time, at 320 degrees F, preheat your oven. And warm the oil in a suitable large frypan over medium heat. Stir in the spring onion and cook for 5 minutes, stirring, until soft. Take it off the heat and then allow the onion mixture to cool. Mix the spring onion, with goat's cheese, ricotta, mozzarella, crème fraiche, Parmesan salt, and black pepper. Fill the center of the prepared pastry with the cheese mixture, leaving 2 inch around the edge. Fold the edges over the filling. Bake the galette for almost 40 minutes until golden. Cool for about 5 minutes. Serve warm.
