Lime Sugar Madeleines with Grapefruit Icing

A dessert that has no parallel, the lime sugar madeleines are made with a flour dough and a grapefruit icing.
Ingredients (8 servings)
1 cup (11 2/3 ounces) plain flour, sifted
1/2 teaspoon baking powder, sifted
2 eggs
3 ounces butter, melted
Zest of 2 limes
1 tablespoon lime juice
1/2 cup caster sugar
5 ounces pure icing sugar, sifted
1 tablespoon grapefruit flesh, chopped
2 teaspoon grapefruit juice
Instructions
At 392 degrees F, preheat your oven. Grease a 12-hole madeleine pan. Place the flour, baking powder, eggs, butter, half the lime zest, lime juice, and 2 ounces caster sugar in a suitable bowl and mix until smooth. Spoon 1 heaped tablespoon of batter into pan holes and bake for 8-10 minutes until golden and cooked through. Invert onto a wire rack and stand to cool completely. During this time, make the lime sugar, combine the remaining 1 2/3 ounces caster sugar and remaining lime zest in a bowl. For ruby red icing, combine icing sugar, chopped grapefruit flesh, and grapefruit juice in a separate bowl. To serve, dip the madeleines in icing, scatter, with lime sugar, and stand on wire racks at room temperature to set.
