13 ounces frozen butter puff pastry, thawed
2/3 cup caster sugar
1/2 cup gin
1 vanilla bean, split, seeds scraped
1 1/2 teaspoon juniper berries
3 Granny Smith apples, peeled, cores removed, quartered
1 2/3 ounces unsalted butter
Vanilla ice cream, to serve
Preparation
At 350 degrees F, preheat your oven. Cut pastry into a 10 inch round. Place sugar, gin, vanilla pod and seeds, and juniper in a 9 inch ovenproof frypan over medium heat, stirring to dissolve sugar. Cook for almost 3-4 minutes until lightly golden, then add the apples, core-side facing up, and cook for 1-2 minutes until lightly golden. Add the butter and take off the heat. Lay the pastry over apples and, using metal tongs, tuck in the edges. Bake for almost 20 minutes until the pastry is golden and crispy. Invert onto a serving plate while still hot and serve with ice cream.
