Honey, Pear and Chocolate Tarte Tatin

Ingredients (6 servings)
1 sheet ready-rolled puff pastry
6 small pears, peeled, halved
Juice of 1 lemon
2 1/2 ounces unsalted butter, chopped
2 1/2 ounces caster sugar
2 1/2 ounces runny honey
1 2/3 ounces walnuts, chopped
1 2/3 ounces dark chocolate, chopped
Whipped cream, to serve
Preparation
At 350 degrees F, preheat your oven. Grease a suitable baking sheet with cooking oil and line with parchment paper. Cut a 9 inch round from the pastry, prick all over with a fork, place on prepared tray, and chill. Place pears in a bowl with the lemon juice to prevent browning. Melt and heat the butter in a 8 inch ovenproof frypan. Sprinkle over the sugar and cook for 2 minutes until it begins to dissolve, then stir in the honey and 1⁄2 teaspoon salt flakes.
Arrange all but one of the pears, cut-side up, in the pan with the narrowest end pointing to the center and cut a round from the remaining pear half and place it, cut-side up, in the space. Cook them for about 30 minutes over medium heat until the sauce has reduced down to a thick and syrupy amber-colored caramel. Shake the pan frequently, and spoon some caramel over the pears. Remove this pan from the heat and sprinkle walnuts and chocolate on top. Cover with the pastry disc and tuck the edges into the sides of the pan with a spoon. Bake for almost 30 minutes until golden. Set aside for about 5 minutes and then invert onto a plate. Serve warm with whipped cream.
