Maple Creme Brulee

Ingredients (6 servings)
5 cups thin cream
1/2 cup maple syrup
1 1/2 teaspoon vanilla bean paste
10 egg yolks
1 tablespoon brown sugar
1 tablespoon corn flour
1 cup caster sugar
Preparation
At 300 degrees F, preheat your oven. Place the cream, maple, and vanilla in a pan over medium-low heat. Bring to a simmer, then strain through a fine sieve and set aside to cool. During this time, place the egg yolks, brown sugar, and corn flour in a stand mixer fitted with the mixing attachment. Mix for 4 minutes until pale.
Reduce the mixing speed to low and, with the motor running, slowly pour in warm cream mixture, beating until well combined. Strain, and then pour into a 9 cups-capacity ovenproof dish. Place dish in a roasting pan, then fill the pan with enough boiling water to come halfway up the sides of the dish. Bake for 1 hour until set with a slight wobble. Cool, then cover and chill overnight. Sprinkle the custard with caster sugar and use a blowtorch to caramelize the top. Serve warm.
