Ingredients (8 servings)
Batter
2 eggs
1 1⁄2 ounces caster sugar
1⁄2 teaspoon vanilla extract
2/3-ounce unsalted butter
2/3-ounce plain flour
1 1⁄2 ounces whole milk
2 1⁄2 ounces whipping cream
A pinch of sea salt
Cherries
41 2/3 ounces cherries
1 2/3 ounces caster sugar
3 tablespoons kirsch, optional
Preparation
Gently mix together the cherries, sugar, and kirsch in a bowl. Leave to macerate for 2 hours. At 350 degrees F, preheat your oven. Brush a suitable baking dish with the melted butter. Spread the sugar and tilt the dish to coat the sides and base evenly, shake out the excess.
In a large bowl, mix together the eggs, sugar, and vanilla until creamy. During this time, melt and heat the butter in a small pan until it gets a pale hazelnut color. Add the flour to the sugar-egg mixture and then mix until lump-free, then slowly pour in the milk, cream, salt, and browned butter. Mix cherries and their juice, then pour into the prepared baking dish. Bake the clafoutis for 35 minutes in the preheated oven until the clafoutis has risen. Leave for about 10 minutes to stand. Drizzle the caster sugar on top, and serve warm.
