Berry Souffles

The French berry soufflé is great to serve with all the hot beverages, and is popular for its prominent sugary taste.
Ingredients (4 servings)
Melted butter, to grease
1 cup caster sugar, plus extra
3 cups frozen berries, thawed
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 tablespoon corn flour
3 egg whites
Icing sugar
vanilla ice cream, to serve
Preparation
At 392 degrees F, preheat your oven. Grease four 1-cup sized ramekins with cooking oil. Dust with extra caster sugar, shaking out any excess. Combine the berries, vanilla, lemon juice, and 1/2 cup caster sugar with 1/4 cup water in a suitable saucepan over medium heat. Combine corn flour with 1 tablespoon water, add to the berries and cook for 2-3 minutes until the fruit has broken down. Mix egg whites and remaining 1/2 cup (110g) caster sugar in a bowl until thick and glossy. Fold three-quarters of the cooled berry sauce into the egg white. Divide the remaining sauce among the ramekins and top with egg white mixture. Bake for 10-12 minutes until risen. Dust the ramekins with icing sugar and serve with ice cream.
