Gilded Chocolate Profiteroles

Without these chocolate profiteroles, it’s as if the French dessert menu is incomplete. Try them with different variations of toppings like chocolate syrup.
Ingredients (4 servings)
5 ounces unsalted butter, chopped
3/4 cup plain flour, sifted
4 eggs, beaten
3 1/2 ounces dark chocolate, chopped
1 cup thickened cream
1 tablespoon icing sugar, sifted
1/2 teaspoon vanilla bean paste
Preparation
At 392 degrees F, preheat your oven. Grease two baking sheets of large size and layer them with parchment paper. Melt 3 1/2 ounces butter with 1 cup water in a suitable pan over low heat. Stir in the flour and mix until lump-free. Take it off the heat, add the eggs gradually and beat until well combined. Spoon the mixture into a piping bag with a round nozzle. Pipe walnut-sized balls onto prepared baking sheets. Bake for almost 30 minutes, then with a sharp knife, make a small slit on top of each profiterole. Turn off heat, and then return the trays to the switched-off oven for 15 minutes. Remove and cool completely.
Add the chocolate, remaining butter, and 1/3 cup water to a pan over low heat. Stir until melted, then allow it to cool. Whip the cream with sugar and vanilla, then transfer to a clean piping bag to pipe it into slits in teroles. Drizzle with chocolate sauce and serve.
