The famous chocolate crème brulee is essential to try on the French dessert menu. Try baking it at home with these healthy ingredients and enjoy it.
Ingredients (6 servings)
7 ounces dark chocolate, chopped
2 cups thickened cream
4 free-range egg yolks
1/3 cup caster sugar
1-2 tablespoon Cognac
Preparation
At 250 degrees F, preheat your oven. Mix the chocolate and cream in a large heatproof bowl placed over a saucepan of simmering water. Stir until melted and mixed, then take it off the heat. Add the egg yolks and sugar in a large clean bowl and beat with electric beaters until thick and pale. Slowly mix in the warm chocolate mixture, a pinch of salt, and the alcohol. Strain the mixture, and divide it into six 1-cup ramekins. Place the ramekins in a deep roasting pan, then pour in enough boiling water to come halfway up the sides of the ramekins. Transfer the ramekins to the oven and cook for 30 minutes until the custards are just set with a slight wobble. Remove the brulee ramekins from the water bath and allow them to cool. Refrigerate them for at least 2 hours. When ready to serve, sprinkle extra sugar on top and caramelize with a blowtorch until golden. Serve warm.
