Banana and Chocolate Tarte Tatin

Without this banana chocolate tarte Tatin, it seems like the French dessert menu is incomplete. Try them with different variations of toppings.
Ingredients (6 servings)
5 ounces caster sugar
3 ounces salted butter, chopped
5 firm bananas, sliced 1 inch thick
13 ounces packet Careme puff pastry, thawed
1 2/3 ounces dark chocolate, melted
Preparation
At 320 degrees F, preheat your oven. Place the sugar in the base of a 10 inch flameproof Tatin pan or 10 inch ovenproof frypan to completely cover the surface. Place the pan over low heat and sauté until the sugar has dissolved. Increase heat to medium-high and cook, without stirring but swirling occasionally, for 3 minutes until the sugar is caramelized and golden brown. Take the caramelized sugar off the heat then add the butter, and swirl to mix. Allow to cool, then press in banana slices to cover the caramel. Cool, then place the pastry over the banana, tucking in edges. Place on a tray and bake for 35 minutes until pastry golden. Set aside baked tart to rest for 5 minutes, then flip the tart onto a serving plate. Scoop out any morsels of caramel and pieces of banana that remain in the dish and return to the tart. Drizzle the tart with melted chocolate and serve warm.
