1 pound roast beef, sliced 1 /8 -inch thick

3 tablespoons soy sauce

3 tablespoons brown sugar

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon sesame oil

1. Combine all ingredients in an airtight bag and allow to marinate overnight, or for a full day. Before starting to dehydrate, move the oven racks to the top and bottom positions. Slide a baking sheet lined with aluminum foil onto the bottom rack of the oven to catch drips. Shake any excess marinade off the meat, and hang either from the top oven rack itself or from wooden skewers suspended between the grills of the rack. Heat the oven to 200ºF, and allow to the meat to cook for about 3 hours, or until it is sufficiently dried out. Break into pieces and store in a cool place in an airtight container for up to a month.
