4 whole turkey legs, about 1 pound each
2 teaspoons coarse salt, smoked is best
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground coriander seed
1 teaspoon dried marjoram
1 /2 teaspoon each paprika and black pepper
1 /4 cup balsamic vinegar
1. Preheat the oven to 400°F and line a baking sheet with foil. Rinse the turkey legs and pat them dry. Mix together all the dry ingredients for the rub. Lightly brush the turkey legs with balsamic vinegar, then apply the rub to each leg, pressing into the skin, and place legs on the prepared baking sheet.
2. Bake at 400°F for 20 minutes, then reduce the heat to 350°F and cook for another 30 minutes or so, until the skin is a dark brown and the internal temperature has reached 170°F.
