Curried Cauliflower and Potatoes
If you only need 6 servings, you can omit the wheat berries. Reduce the amount of water by a cup and go a bit lighter on the seasoning if you do.
Serves 8
Ingredients:
- ½ cup wheat berries
- 2 ¼ cups water
- 6 medium potatoes, peeled and quartered
- 1 small cauliflower, cut into florets
- Pinch asafetida
- ¾ teaspoon ground turmeric
- ½ teaspoon chili powder
- 1 ½ teaspoons ground cumin
- ¾ teaspoon salt
- Pinch sugar
- 2 tomatoes, chopped
- ½ teaspoon garam masala
- Add the wheat berries to the slow cooker. Bring 1 cup of the water to a boil and pour it over the wheat berries. Cover and cook on high for 1 hour.
- Add the remaining ingredients, reduce the heat setting to low, cover and cook for 6 hours or until the potatoes are cooked through.
