Beans and Rice
You can add an additional boost to the flavor of this dish by substituting spicy tomato-vegetable juice for the broth or water.

Serves 6
Ingredients:
- Nonstick spray
- 1 tablespoon olive oil
- 1 cup converted long-grain rice
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can pinto beans, rinsed and drained
- ½ teaspoon salt
- 1 teaspoon Italian seasoning
- ½ tablespoon dried onion flakes
- 1 (15-ounce) can diced tomatoes
- 1 ¼ cups vegetable broth or water
- Treat the slow cooker with nonstick spray. Add the oil and rice; stir to coat the rice in the oil.
- Add the black beans, pinto beans, salt, Italian seasoning, onion flakes, tomatoes, and vegetable broth or water to the slow cooker. Stir to combine. Cover and cook on low for 6 hours or until the rice is tender.
