Sweet Potato Casserole
This is a welcome side dish at almost any holiday buffet.

Serves 8
Ingredients:
- Nonstick spray
- 2 (29-ounce) cans sweet potatoes
- ⅓ cup plus 2 teaspoons butter, melted
- 2 tablespoons white sugar
- 2 tablespoons plus ⅓ cup brown sugar
- 1 tablespoon orange juice
- 2 large eggs, beaten
- ½ cup milk
- ⅓ cup chopped pecans
- 2 tablespoons all-purpose flour
- Treat the slow cooker with nonstick spray.
- Drain the sweet potatoes, add to a bowl, and mash them together with ⅓ cup of the butter, the white sugar, and 2 tablespoons of the brown sugar. Stir in the orange juice, eggs, and milk. Transfer the sweet potato mixture to the slow cooker.
- Add the pecans, ⅓ cup of the brown sugar, the flour, and the remaining 2 tablespoons of butter to a bowl; use a fork to blend. Sprinkle over the sweet potatoes. Cover and cook on low for 6 hours.
