pork verde tacos

Prep: 15 minutes Cook: 10 minutes Makes: 5 servings

  • 3 portions Shredded Pork Base (3 cups) (see recipe)
  • 1 cup green salsa (salsa verde)
  • 10 6-inch corn tortillas, heated according to package directions
  • 1 recipe Quick Jalapeño Sauce (see below)
  •   Shredded cabbage and/or crumbled queso fresco (optional)
  •   Lime wedges (optional)

1. In a large saucepan combine Shredded Pork Base and green salsa. Cook, covered, over medium heat about 10 minutes or until heated through, stirring occasionally.

2. Spoon pork onto tortillas. Top with Quick Jalapeño Sauce and, if desired, cabbage and/or queso fresco. Fold tortillas over filling. If desired, serve with lime wedges.

Quick Jalapeño Sauce: In a small bowl stir together ¼ cup mayonnaise; 2 tablespoons snipped fresh cilantro; one-half of a small fresh jalapeño chile pepper, seeded and finely chopped (see tip); 1 teaspoon cider vinegar, 1 teaspoon water; and 1 small clove garlic, minced.

Tip

Make the Quick Jalapeño Sauce a few hours ahead. Cover and store in the refrigerator until serving time.
