Ditch the ketchup and opt instead for this refreshing, zingy relish that goes well with grilled/broiled meats, fish, poultry, cheese and vegetarian dishes. It’s also good spooned over brown rice or wholewheat couscous. It is best served at room temperature.
SERVES 4 PREPARATION 10 minutes
4 vine-ripened tomatoes, quartered, deseeded and finely chopped
juice of 1 lime
1 red onion, finely chopped
1 mild green chilli, deseeded and finely chopped
1 small handful mint, finely chopped
salt and freshly ground black pepper
Put all the ingredients in a bowl and stir until well combined.
