Oats, apples and almonds provide fibre and slow-release energy to keep you going through the morning. This particular muesli recipe is largely made the night before serving to allow the oats to soften in the nutritious almond milk, which means it is both quick to prepare, saving you precious time in the morning, and easier to digest.
SERVES 4 PREPARATION 10 minutes, plus soaking
200g/7oz/2 cups rolled jumbo oats
455ml/16fl oz/scant 2 cups unsweetened almond milk
100ml/3½fl oz/scant ½ cup unsweetened coconut yogurt
1 sweet apple (unpeeled), cored and grated
2 large handfuls blueberries
2 tbsp toasted flaked almonds
freshly grated nutmeg, for sprinkling
1 Put the oats in a mixing bowl and pour the almond milk over. Cover with cling film and leave in the refrigerator overnight.
2 Just before serving, stir in the yogurt and grated apple. Spoon into 4 bowls and top with the blueberries, almonds and a sprinkling of nutmeg before serving.
The oat and almond milk mixture can be stored in an airtight container in the refrigerator for up to 1 day.
Blueberries are high in beneficial antioxidants and they provide significant amounts of vitamins C and E, which support the immune system. Especially good for the eyes, blueberries help to protect against macular degeneration. The soluble fibre found in oats helps to balance blood-sugar levels, whilst the almonds, yogurt and milk provide valuable amounts of bone-strengthening calcium.
