CAKES, BAKES & BREADS

This deliciously diverse collection of recipes shows that it is possible to make delicious cakes, cookies and baked treats with the minimum amount of added sugar. This doesn’t mean that they should form an everyday part of your diet though; the saying “everything in moderation” is key here! The occasional slice of Spiced Apple Cake, helping of Apple & Raspberry Flapjack Pie or square of Chocolate & Beetroot Brownie make a welcome treat and will satisfy any desire for something sweet without you having to overindulge. You’ll find low-sugar versions of family favourites, such as muffins, cheesecake, cookies and shortbread; what’s more, many are surprisingly lower in fat than their regular counterparts.

When baking, fruit will help to keep your cakes moist as well as add natural sweetness and substance, while spices such as nutmeg and cinnamon add a wonderful aroma and flavour. Unlike refined sugar and its empty calories, fruit provides valuable fibre as well as a range of vitamins and minerals. Where necessary, but not to excess, xylitol, stevia and brown rice syrup are also used. These natural sugar alternatives do not cause irregular blood-sugar levels in the same way as refined sugar does, while the fibre in fruit also helps to curb peaks and troughs.
