DETOX
SERVES 1
• 1 slice of sourdough bread
• Olive oil
• 80g tomatoes
• ½ large avocado
• Salt and pepper
• 3 slices of halloumi
• 1–2 medium eggs
• Coffee!
If you have a hangover and need to ‘detox’ your body of alcohol, this brunch should be top of your list of foods to eat. While there’s nothing that can really speed up the process of metabolising alcohol except time, giving your body all the building blocks it needs to do that certainly helps. Here we have carbohydrates from the bread, fats from the avocado and halloumi, protein from the eggs and lycopene from the tomatoes. Lycopene is the phytochemical and antioxidant that makes tomatoes red and keeps your liver happy.
Get ready to multitask: place a large frying pan over a medium heat, bring a small saucepan of water to the boil and prepare your coffee.
Toast the bread.
Drizzle a little olive oil on one side of the frying pan.
Roughly chop the tomatoes and add them to that side.
Mash the avocado on the toast and season with salt and pepper.
Turn down the heat under the frying pan and add the halloumi to the other side of the pan. Cook for a few minutes on each side.
Crack the egg(s) into the boiling water and poach for 3 minutes, until the white is opaque.
Assemble everything on a plate and tuck in immediately.
