• 4 fresh figs
• 1 avocado
• 200g cooked puy lentils (100g raw)
• 50g rocket
For the dressing
• 2 tbsp tahini
• ¼ tsp salt
• ¼ tsp garlic granules or powder
Avocado is the ultimate ‘healthy fats’ champion. I don’t think I’ve ever heard someone claim that avocados are bad for you, and that’s saying something! Avocados are rich in unsaturated fats as well as containing vitamin E.
Cut the figs into quarters and the avocado into cubes.
Mix together the cooked lentils, figs, avocado and rocket in a serving bowl.
Mix together the tahini, salt and garlic granules or powder with 3 tablespoons of water.
Drizzle the dressing over the salad and serve.
