(Aderezo de Cilantro y Limón)
This brilliant green dressing is especially nice for a light summer green salad, but can be used to top a salad any time of year.
2 tablespoons white vinegar
2 tablespoons freshly squeezed lime juice
1 cup olive oil
1 small bunch fresh cilantro, stems cut
2 green onions
1 garlic clove
1 teaspoon freshly ground black pepper
1 teaspoon salt
Pour the vinegar and lime juice into a food processor or blender. With the processor on low, slowly pour in the olive oil until combined. Add the cilantro, green onions, garlic, black pepper, and salt and process until smooth.
Cover and refrigerate in a tightly closed glass container for up to 5 days, but it’s best to use it sooner rather than later.
