Watermelon Juice with Rosewater

Watermelon juice is a summertime favourite, and not only in Morocco. The addition of rosewater turns a pleasant drink into a divine one on a hot day. Wipe the watermelon skin with a damp cloth before removing the succulent pink flesh.

SERVES 2–3

1.5 kg (3 lb 5 oz) watermelon

1 teaspoon rosewater

Chill the watermelon thoroughly. Remove the rind and cut the pink flesh into thick chunks that will fit into the juice extractor feed tube. Extract the watermelon juice into a pitcher. Take care when extracting the juice, as the seeds have a tendency to jump out of the feed tube.

Add the rosewater and pour into two tall glasses, or store the juice in the refrigerator until ready to serve.
