Vanilla Chocolate Cupcakes

Ingredients:
• ¼ teaspoon vanilla extract
• ½ cup avocado oil
• 1 cup water
• ½ cup butter, melted
• ¼ cup cocoa powder
• ½ cup coconut, shredded
• 2 ounces chocolate, chopped
• ¼ cup swerve
Directions:
In a bowl, combine the butter with the oil and the rest of the ingredients except the water and whisk really well. Line a cupcake pan that fits the instant pot with parchment paper and divide the chocolate mix inside. Put the water in the instant pot, add the steamer basket, add the cupcake pan inside, put the lid on and cook on High for 20 minutes. Release the pressure naturally for 10 minutes and serve the cupcakes cold.
