Plums and Rice Pudding

Ingredients:
• ½ cup swerve
• ¼ cup heavy cream
• 2 cups coconut milk
• 2 eggs, whisked
• 1 cup cauliflower rice
• ½ cup plums, pitted and chopped
• ½ teaspoon vanilla extract
Directions:
In your instant pot, mix the cauliflower rice with the plums and the rest of the ingredients, put the lid on and cook on High for 20 minutes. Release the pressure fast for 6 minutes, divide the pudding into bowls and serve cold.
