Creamy Rice Pudding

Ingredients:
• 2 cups cauliflower rice
• 2 cups heavy cream
• 3 tablespoons swerve
• 2 cups cream cheese, soft
• 1 cup water
• 1 teaspoon lemon zest, grated
Directions:
In a bowl, whisk the cream with the cream cheese and the rest of the ingredients except the water, whisk really well and divide into 4 ramekins. Put the water in your instant pot, add the steamer basket, put the ramekins inside, put the lid on and cook on High for 20 minutes. Release the pressure naturally for 10 minutes and serve the puddings warm.
