Sweet Zucchini Pudding

Ingredients:
•    Cooking spray
•    1 cup coconut flour
•    3 cups zucchinis, grated
•    1 cup swerve
•    2 eggs, whisked
•    1 cup water
•    1 tablespoon vanilla extract   
Directions:
In a bowl mix the zucchinis with the rest of the ingredients except the water and the cooking spray and whisk well. Grease a pudding pan that fits the instant pot with the cooking spray and pour the zucchini mix inside. Add the water to the instant pot, add the steamer basket, put the pan, put the lid on and cook on High for 40 minutes. Release the pressure naturally for 10 minutes and serve the pudding cold.
