Nutmeg Pudding

Ingredients:
• 1 cup heavy cream
• ½ teaspoon baking soda
• 1 teaspoon nutmeg, ground
• 2 cups water
• ½ cup swerve
• ½ cup almond flour
• Cooking spray
• 4 eggs, whisked
• 2/3 cup ghee, melted
Directions:
In a bowl, mix the swerve with the eggs and the rest of the ingredients except the cooking spray and the water and whisk. Grease a pudding pan with the cooking spray and pour the pudding mix inside. Put the water in the instant pot, add the steamer basket, put the pudding pan inside, put the lid on and cook on High for 30 minutes. Release the pressure naturally for 10 minutes, cool the pudding down and serve.
