In a bowl, mix the chocolate with the sugar, ginger and the rest of the ingredients except the water, whisk and divide into 4 ramekins. Put the water in the instant pot, add the steamer basket, put the ramekins inside, put the lid on and cook on High for 15 minutes. Release the pressure naturally for 10 minutes, and serve the cream cold.
