Plums Jam

Ingredients:
- Juice of 1 lemon
- 1 tablespoon lemon zest, grated
- 1 cup swerve
- 2 cups plums, pitted and halved
- 1 cup water
Directions:
In your instant pot, mix the plums with the rest of the ingredients, put the lid on and cook on Low for 30 minutes. Release the pressure naturally for 10 minutes, blend the mix using an immersion blender, divide into jars and serve.
